I think that he made up his mind to leave the team shortly after the "God among insects" speech. He saw his chance to escape and gave the "kids' table ****" bit as an excuse to get away. And he probably was reasonably sure that the two "good" kids wouldn't disobey the older X-Men's orders and follow him out of the plane. Wish he did just stumble upon Magneto and Mystique in the woods and made a fast, fateful decision (because I love Pyro/Iceman/Rogue together) but I doubt it.

I think he made up his mind after the "God amongst insects" speech. I think it was definitely playing on his mind when he leaves the jet, mainly frustration because he knows he can help the others, and has the power to do so. Being told to stay put by the X-men just irritates him, especially as he knows Magneto considers him powerful. And he decides to go help. Then with the mental attack on his mind in the forest, I think that finished it for him. When he saw Magneto and Mystique, I think he sympathized with them more than the others. The last shot of him in the helicopter - there is some sad regret in his face, a sort of "Oh man, have I made the right decision?" expression.
